It’s well known that people like to gather where food is served. Despite the many other comfortable rooms at a house party, the kitchen is oftentimes the most crowded space. And the college cafeteria is no exception. Improved effectiveness begins by understanding that food service spaces are typically used for a wide variety of important functions. A contemporary design acknowledges this, transforming the traditional cafeteria into a multi-purpose space that can perform the following roles vital to the higher education experience:

Community Hub

Recreation and relaxation, food service, individual work space, group meeting space and research facility. Think of the popular mall food court design, with kiosks encircling a central common area. Why should these kiosks be limited only to food service? Embrace the versatility of this space with computer printing stations, copier and scanning machines, or even a reference librarian with stations for accessing discipline-specific databases or tools.

Classroom Extension

Food service spaces are increasingly becoming extensions of the classroom. They provide a pleasant environment for social interaction that promotes collaborative learning, with the added benefit of being able to grab a bite to eat. To facilitate this important function, the space should include WiFi and furniture with built-in outlets that bring power from the floor to the work surface.

Living Room Extension

It’s a mistake to design a space for students to sit and eat. Students visit food service spaces to eat and talk, eat and read, eat and check email. One student might stop in between classes for a coffee and to review her lesson plan before an exam. A group of students may gather mid-afternoon to collaborate on a project.

Booths offering a stand-up height option create positive points of collision for groups, enabling students to choose their level of interaction. Fully involved students may prefer to sit, whereas others have the option to stand for more temporary engagement. Effective designs must also include not only surfaces to eat on, but also ample space for laptops, books, pens and paper.

Leveraging a food service space design to perform these important functions will help enhance the time students spend there and add value to their higher education experience.
